Ingredients

  • 2 cups steamed basmati rice
  • 3 tbsp Sumadhura Avakaya Pickle
  • 1 tbsp pure ghee
  • Fresh curry leaves for garnish
  • 2 roasted papads
  • Pinch of salt (optional)

Method

  1. Cook basmati rice until fluffy, drain and let it cool for 2 minutes
  2. Transfer to a serving bowl and break up any clumps
  3. Add a generous helping of Sumadhura Avakaya pickle and mix gently
  4. Drizzle warm ghee over the top
  5. Garnish with fresh curry leaves and serve with crushed papad
Chef's Tip: Use day-old rice for best results — the grains stay separate and soak up the pickle masala perfectly.

  • 2 cups dosa batter (store-bought or homemade)
  • 4 tbsp Sumadhura Kandi Podi
  • 2 tbsp sesame oil
  • 1 tbsp butter
  • Coconut chutney for serving
  • Sambar for serving

Method

  1. Heat a cast-iron tawa on medium-high until smoking hot
  2. Pour a ladleful of batter and spread in thin circular motion
  3. Drizzle sesame oil around the edges
  4. Sprinkle a generous layer of Kandi Podi over the dosa
  5. Add a small knob of butter and let it crisp up until golden
  6. Fold and serve immediately with coconut chutney and sambar
Chef's Tip: The tawa must be really hot before you pour the batter — that's the secret to a crispy, lacy dosa every time.

Gongura Chicken Curry

Ingredients

  • 500g chicken (bone-in, curry cut)
  • 4 tbsp Sumadhura Gongura Pickle
  • 2 onions, finely sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chillies, slit
  • 1 tsp turmeric powder
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander for garnish

Method

  1. Heat oil in a heavy-bottomed pan and sauté onions until golden brown
  2. Add garlic, ginger, and green chillies — cook for 2 minutes
  3. Add turmeric and the chicken pieces, sear on high heat for 3-4 minutes
  4. Add Sumadhura Gongura Pickle and mix well to coat the chicken
  5. Add half a cup of water, cover and simmer on low for 25-30 minutes
  6. Check seasoning, garnish with fresh coriander and serve with steamed rice
Chef's Tip: Don't add too much water — the gongura pickle releases its own moisture and creates a thick, flavourful gravy.
